Energizing Lemon Herb and Cranberry Cabbage Steak Salad – Coming in hot with an ultra high vibe and energy-boosting cabbage steak covered in a zesty lemon herb dressing and covered by a flavorful tart garnish of anti-oxidant-rich tart cranberries to taste! Cabbage is a powerhouse superfood full of nutrients, antioxidants, vitamins, and minerals that are essential for brain development and nerve cell health. According to a study by the University of Rochester Medical Center, “cruciferous vegetables like cabbage, cauliflower, and broccoli may help reduce the levels of the bad tau proteins that accumulate in the brains of Alzheimer’s patients”. Cabbage provides vitamins B6, C, K, and B1, which are essential for a healthy body, so I recommend all people seeking new ways to eat healthy to enjoy this creation for more nutrients and vitamins.
Healthy Tip: Just one cup of raw, chopped cabbage provides 34% of the USDA’s recommended daily intake of vitamin C for adult women and nearly 29% of the recommended daily intake for men.
Ingredients:
(Cabbage Steak)
Green cabbage or Red Cabbage (1/4 inch thick vertically cut piece)
(Dressing mixture)
1/4 cup Veganaise
1 lemon (juice) or substitute 1/4 cup ACV
A bushel of fresh cilantro (the width of two fingers, finely chopped)
A bushel of fresh parsley (the width of two fingers, finely chopped)
(Garnish)
Dried cranberries (Trader Joeβs brand with no added sugar)
Other dried or fresh fruit toppings: Currants, craisins, figs, golden raisin, kumquat, tart cherries, or pomegranate, and the list goes on…
Instructions:
1. First, wash and pat dry the produce. Set aside.
2. Next, use a chef knife and cut a 1/4-inch thick piece of cabbage vertically and place it on the serving plate.
3. Chop up the fresh herbs finely until your desired texture. Set aside while you prepare the dressing.
4. Using a small mixing bowl, add wet ingredients together and mix until smooth.
5. Add the chopped herbs to the bowl and mix until everything is saturated with the dressing.
6. Next, pour the dressing over the top of the cabbage steak.
7. Add one handful of dried cranberries or your favorite fruit to the top for sweetness.
8. Enjoy it chilled.
