Tom Kha Soup – Thai inspired cold season vegan soup 🥣
This scrumptious recipe is a warming soup. I love it because it is based on one of my favorite Thai cuisines. For those who like a little heat, this will warm you from your head to toes. Eating foods with warming properties that produce a little heat is effective for increasing our overall body heat, blood flow, and offers to heal properties that aid in optimal digestion. If you’re not keen on the heat (spiciness) you can substitute the peppers for sweet peppers instead. Try this recipe paired with a side dish of curry rice or quinoa.
Ingredients:
4 cups vegetable stalk
1 cup mushrooms
2 large heirloom tomatoes (sliced)
1 sweet potato (cubed)
2 carrots (peeled & cubed)
2 scallions (chopped finely)
1 bundle of fresh basil (chopped)
A hand full of fresh parsley (chopped)
1 lemon (juices and minced peel)
2 tablespoons fresh ginger (minced)
15 oz pure condensed coconut milk
1 Serrano pepper (sliced)
1 onion (diced)
2 leaves of fresh kale (de-ribbed, chopped finely)
1/4 teaspoon fresh turmeric (minced)
Himalayan or kosher salt and pepper to taste!
Instructions:

- Meanwhile, wash and prep veggies and continue to stir in vegetables as you go.
- When you get to the Serrano peppers (you can remove seeds to reduce the intensity of heat) or replace them with sweet bell peppers.
- Season with Himalayan or kosher salt and pepper to taste!
- Enjoy right away!
Caution: When handling the peppers (Jalapeno or Serrano) be careful of direct contact, as if they carry capsaicin, which is a chemical compound that is highly concentrated and can cause burning or a hot sensation to your skin. Gloves are recommended. Once you have been in contact with peppers, do not touch your lips, eyes, face, or other body parts. The extra heat that the capsaicin give off comes from its natural oils found in the peppers and can be diluted by washing the peppers.
