As a community college, Portland Community College provides access to quality education while promoting economic development and sustainability through diversity, equity, and inclusion. The founder of Jaclyn Creations and author, Jaclyn Rae is proud to be alumni of Portland Community College and to have her Vegan Recipe Book available for loan through PCC libraries as a resource in nutrition and plant-based eating. Her own plant-based lifestyle has taught her the importance of embracing cultural diversity to help vegans and veg-curious students overcome oppression within their own communities as well as lack of awareness of cultures that make veganism challenging.
